Two recipe recommendations

I tried a couple of exciting new recipes this week and they were both great. For you mainlanders, they might be a little summery, sorry. Also, apologies to my dad, who doesn’t like eggplant. Both of these recipes are way more delicious than they look when you read them.

1. Soba noodles with eggplant and mango
Mango season is just starting here, hooray! I changed this recipe slightly: I halved all quantities and just sauteed the eggplant in a pan with a tablespoon or so of oil. (I don’t deep fry at home, it scares me.) This is so tasty I should probably get the cookbook it came from.

2. Armenian vegetable stew (Gouvej)
This is wonderful, sort of like ratatouille (but with apple! and okra!) I added chickpeas to this to make it more dinnery and less side-dishy. Also, I added a lot more garlic than the recipe called for. Bonus: makes great leftovers.
