Delicious green sauce

This is SUPER easy, and a great sauce to serve with any preparation of fish, chicken, grilled or roasted veggies, tofu, potatoes, noodles, I could go on, but I won’t.

1 bunch cilantro, rinsed (including small stems)
1 green onion, roots trimmed
pinch of salt, or to taste
2 tsp sherry vinegar (or other mild vinegar)
2 tbsp good olive oil
1 clove garlic, peeled

1. Combine all ingredients in the bowl of a blender.
2. Add a few tablespoons of water, cover, and puree on low speed. If the sauce isn’t coming together, add a bit more water and puree until completely smooth.
3. Adjust seasoning if necessary and serve as desired. This will maintain its flavor and bright green color in a sealed container in the refrigerator for at least five days.
